    做肉饼煮毛豆

          包过饺子馄饨大包子,做过甜水面,没做过的面食好像只有馒头肉饼,馒头是铁定不用专门学的,那就来学学肉饼。
          百度来的:馅饼的做法:
                       1、面粉加用温水调好的干酵母(按说明书),揉透。
                       2、做肉馅:好五花肉剁馅,加盐、胡椒、少许味精、小葱末、加一点点水(加菜就不加水)搅拌拌匀,反复多次,搅拌时最好朝一个方向,然后放冷藏室静置30分钟,即可。
                       3、用发好的面,将肉馅包进去,大小随意,按扁(厚薄适中)。
                       4、平底锅放油,点火,将做好的馅饼防入,加冷水,平馅饼的上面,盖上锅盖,开大火,等水快干的时候,起锅盖。改中火,慢慢转锅,让锅边部分在火上烤一下,煎金黄色,再翻面,也煎成金黄色,即可。
    注:馅里加蔬菜的做法:
                       我一般用青菜(小白菜,大白菜、芹菜也可以),烧一锅水,开,放青菜适量,变色捞出,放入旁边一大盆冷水里,及时冷却,(否则,青菜会黄),然后用手捞出挤干水分,剁碎,这样好剁多了,再挤干水分,拌油。
                       和肉馅混合,拌匀!及时用!
     
            这个比较简单,等实践遇到问题时再去搜详细的吧。
           
            还有无意中看到一个煮毛豆的方法:买来毛豆用剪刀把两头剪开,方便入味,锅里放水,加2,3片辣椒,放个八角,多放点盐,等着煮开就好了。
     
            看起来像吃烧烤时吃的那种毛豆,好像也比较简单,回头试一下。
